Pizza Lover's Meatloaf

1 package (16 oz size) frozen pepper stir-fry blend
1 package (3 oz size) pepperoni slices -- quartered
1 1/2 pound ground beef
1 egg
1/2 cup bread crumbs
1/3 cup grated parmesan cheese
1 jar (14 oz size) pizza sauce -- divided
1 teaspoon salt
1/8 teaspoon garlic powder
1 teaspoon italian seasoning
1 can (2 1/4 oz size) sliced ripe olives -- drained
4 slices mozzarella cheese
Recipe
Chop pepper stir-fry into 1/2 inch pieces while still frozen; allow to thaw.
In a skillet, combine pepper and pepperoni; cook on medium-high heat for 3-4 minutes. Drain and pat dry on paper towels.
In a large bowl, combine ground beef, egg, bread crumbs, parmesan cheese, 1/2 cup pizza sauce, salt, garlic and Italian seasoning.
Lay out a large sheet of waxed paper; shape meat loaf mixture into a 15 inch x 12 inch rectangle. Sprinkle pepper mixture on top of rectangle to within 1 inch of edges. Sprinkle olives over peppers. Beginning with 12 inch edge roll rectangle into loaf sealing long edge and ends. Place in center of a 15 inch x 10 inch x 1 inch baking pan. Bake at 375 degrees for 1 hour.
Pour remaining pizza sauce over top of meat loaf. Arrange mozzarella cheese on top of sauce. Bake 15 minutes longer or until cheese is melted and meat loaf is done.
