Mexican Cornbread

2 cups self-rising cornmeal
2 eggs, beaten
1/2 cup vegetable oil
1 small can sweet creamed corn
1 small to medium onion, chopped
1/2 green pepper, chopped (optional)
2 or more whole jalapenos, sliced (depending on how much
heat you like)
1 cup milk or buttermilk
1 1/2 cups shredded cheddar cheeseRecipe
Grease a glass pyrex baking dish with margarine or butter and then lightly dust with cornmeal. Preheat oven to 350 degrees. Mix together all ingredients except cheese. Pour half the cornmeal mixture into baking dish. Layer half the cheese on top. Pour remaining cornmeal mixture over cheese, then top with the remaining cheese. Bake for approximately 45 minutes, checking to make sure cheese doesn't burn.
