    Nonstick Cooking Spray
    1 T. lemon Juice
    1 c. skim milk
    3 egg whites
    2 T. Canola Oil
    1 tsp. almond extract
    1/2 c. packed brown sugar
    1 2/3 c. white flour
    1/2 tsp. baking powder
    1 tsp. baking soda
    1 (12 oz.) bag unsweetened cherries, thawed & Drained

    Preheat oven to 375. Spray a 12 cup muffin tin with nonstick cooking spray; Set aside. Pour lemon juice in a one-cup measure and add skim milk to equal one cup sour milk. In a large mixing bowl, combine sour milk, egg white, oil and almond extract. Add brown sugar and stir. Add remaining dry ingredients; stir to combine. Fold in the cherries. Spoon batter into the prepared muffin tin. Bake for 20-22 minutes, until a toothpick inserted into the center of muffin comes out clean. Cool in the pan for about 30 mins, then remove from tin. Cool on a wire rack. Store in covered container.

    Yield: 12 muffins
