Crumble Top Banana Muffins

List of Ingredients
1 ¼ c. flour
1 T. baking powder
1/8 tsp. salt
1 egg
½ c. milk
1/3 c. firmly packed brown sugar
3 T. oil
1 ½ c. Post Banana Nut Crunch Cereal
1 c. finely chopped bananas
Crumble Top Topping:
½ c. Post Banana Nut Crunch Cereal, lightly crushed
1 T. brown sugar
½ tsp. ground cinnamon
1 tsp. oil
Recipe
Heat oven to 400. Mix flour, baking powder, and salt in large bowl. Beat egg in small bowl; stir in milk, brown sugar, and oil. Add to flour mixture; stir just until moistened. (batter will be lumpy) Stir in cereal and bananas. Spoon batter into greased or paper-liners muffin pan. Filling each one 2/3 full.
Topping: Mix cereal, brown sugar and cinnamon. Drizzle with oil stir until crumbly. Sprinkle evenly over muffins. Bake 20 minutes or until lightly browned. Serve warm. Makes 12 Muffins
