Easy Zucchini Muffins

3 lg. eggs, beaten
1 c. applesauce
2 c. granulated sugar
1 T. pure vanilla extract
3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1-1/2 tsp. nutmeg
1-1/2 tsp. cinnamon
3 c. shredded zucchini
1/2 c. chopped pecansRecipe
Preheat oven to 325F (165C). In a large mixing bowl, combine eggs, applesauce, sugar and vanilla. Whisk until well blended. Using a large spoon, blend in flour. Stir in baking soda, baking powder, salt, nutmeg and cinnamon; mix well. Fold in zucchini and pecans until well blended. Pour batter equally into greased muffin tins or loaf pans. Bake 20 minutes for muffins and 40 minutes for loaves. Yields 36 muffins or 2 small loaves.
