    Oatmeal Raisin Muffins

    Streusel:

    1/3 cup quick oatmeal
    1/4 cup flour
    1/4 cup brown sugar
    3 tablespoons margarine, chilled

    Muffins:

    1-1/2 cups flour
    1 cup quick oatmeal
    1/2 cup sugar
    1 tablespoon baking powder
    1/4 teaspoon salt
    1 teaspoon cinnamon
    1 cup raisins
    1 cup milk
    1/4 cup oil
    1 egg, lightly beaten

    Heat oven to 400 degrees. Line 12 muffin cups with paper cups. For streusel, combine oatmeal, flour and brown sugar. Cut in margarine. Set aside. For muffins, combine flour, oatmeal, sugar, baking powder, salt, cinnamon and raisins. In separate bowl combine milk, oil and egg. Stir into dry ingredients just until moistened. Fill muffin cups 3/4 full. Sprinkle with streusel. Gently pat streusel onto dough. Bake 18-20 minutes or until golden brown.
