Chili Corn Chip Pie

*1 lb. ground beef
*1 pkg. chili seasoning mix
*1 can diced tomatoes
*1 can kidney beans, drained and rinsed
*1 large bag of corn chips
*1 C Mexican cheese blend, shredded
*1 C sour cream
*optional: mix some cut up chives in sour cream
Recipe
Crumble the beef into a skillet.
Position the skillet over medium heat on the stove.
Cook the meat 10 minutes or until browned through.
Drain the meat on a paper towel.
Return the drained meat to the skillet.
Sprinkle the chili seasoning over the meat.
Gently stir in the tomatoes and beans.
Continue stirring to combine all the ingredients together well.
Reduce the heat to low and cover the skillet tightly.
Cook 20 minutes or until completely heated through.
Place the corn chips into a pie plate.
Spread the meat mixture over the corn chips.
Sprinkle the cheese over the meat mixture while it's hot so the cheese melts a little.
Place the sour cream in dollops over the entire top of the pie just before serving.
