Shortening (to grease baking pan)
4 medium-size, skinless, boneless chicken breast halves (about 1 pound)
1 cup, bite-size cheese crackers (regular or reduced fat)
1/4 cup, dried bread crumbs
1/2 cup, buttermilk or milk Recipe
Preheat oven to 400 degrees. Lightly grease a baking sheet with shortening.
Cut each chicken breast half into 6 strips.
Put crackers in a plastic bag. Press out the air from the bag and seal or tie the bag closed. Use a rolling pin to crush the crackers, then pour the crushed crackers into a pie plate or shallow dish. Add the bread crumbs to the cracker crumbs and stir to combine. [Alternatively, leave the crushed crackers in the bag, add the breadcrumbs to the cracker crumbs, and shake to combine.]
Pour the buttermilk or milk into the mixing bowl. Dip each piece of chicken into the milk, turning to coat completely. Roll [or toss, if the crumbs are in a bag] each piece of chicken in the crumb mixture. Press the crumbs into the chicken to be sure that they stick. Place the coated pieces onto the greased baking sheet.
Bake in the preheated oven for 15-20 minutes or until no pink color is left in the center of the chicken, and the crumb mixture is golden brown. Remove from oven and allow to stand for 5 minutes. Serve with dipping sauce
