Unstuffed Cabbage Soup
1 pkg. (16 oz) kielbasa, cut into ½” thick slices
1 onion, chopped, 1 cup
5 cups thinly sliced cabbage
2 carrots, thinly sliced
2 cans (14 ½ oz. each) diced tomatoes with garlic and onion
1/3 cup uncooked white rice
Recipe
In pot, cook kielbasa and onion over medium-high heat, stirring often, until browned, 2-3 minutes. Stir in cabbage and carrots; cook until cabbage is just wilted, 2-3 minutes. Add tomatoes with juice, rice, 3 ½ cups water and ¼ tsp. pepper. Bring to a boil. Reduce heat to low; cover and simmer, stirring occasionally, until rice is cooked and vegetables are tender, about 30 minutes. Servings: 8 Calories: 222
