Carrot Casserole

5 c. raw carrots
1 medium onion
¼ c. oleo
½ lb. (8oz.) Velveeta cheese
1 sleeve Ritz Crackers
Recipe
Slice and cook carrots until nearly done. Sauté onion in oleo. Grease a casserole and layer carrots with slices of Velveeta cheese (do 2 layers each.) Pour over onion and oleo the layers. Top with one sleeve of Ritz crackers. Bake at 350 for 35 to 45 minutes.
