    Cheddar Cheese Potato Gratin

    6 red skin potatoes, sliced and divided
    4 ounces of Cheddar cheese, shredded and divided
    1 cup of chicken broth
    1/2 teaspoon of pepper
    4 scallions, sliced and divided

    Recipe



    Heat your oven to 350º F. In a greased 2 quart baking dish, layer half of the potatoes in slightly overlapping, circular pattern. Sprinkle with half of the cheese and scallions. Repeat layering with remaining potatoes, cheese and scallions. Pour in broth and sprinkle with pepper. Cover with foil, and bake for 45 minutes. Uncover and bake for an additional 35 minutes or until golden brown. Makes 8 servings
