List of Ingredients




2 c. peeled, cubed potatoes
1 c. chopped onions
1 c. thinly sliced carrots
1/2 c. diagonally sliced celery
2 tbsp. water
1/2 tsp. salt
1/8 tsp. pepper
8 slices bacon
2 tbsp. butter





Recipe




In a 3 quart casserole. Combine potatoes, carrots, celery and water. Remember potatoes are peeled and cubed, onions chopped, carrots thinly sliced in small pieces on the diagonal. Cover casserole with saran wrap and microwave on high for 5-6 minutes; drain. Stir in salt and pepper.
Place potato mixture in 18 x 18 inch heavy duty foil. Top with bacon crisply cooked and cut into 2 inch pieces and dot with butter. Wrap securely. Place on medium hot coals, 4-6 inches from heat. Cook 25- 30 minutes. Serves 4-6
