    This recipe makes a very flavorful and really healthy low-fat dip or spread that your guests will not believe is so good for them!

    List of Ingredients





    1 cup fresh spinach
    2 cloves garlic, minced
    1 shallot, minced
    1 / 2 cup fresh basil
    1 cup nonfat cottage cheese
    2 teaspoons extra virgin olive oil
    2 tablespoons skim milk, optional
    1 / 4 cup grated Parmigiano-Reggiano

    Equipment:
    Food processor fitted with steel blade

    Place spinach, garlic, cheese, shallot and basil in food processor. Process to a paste.

    With motor running, add cottage cheese and oil. Process until smooth. Add milk to achieve the desired consistency for your use.

    Cook's Tip: Best when made a day ahead, if possible.
