Recipe Introduction
Crisp and light, these cream puffs have swill cheese in the dough. Mix ahead, bake when needed.
List of Ingredients
- 1/2 cup hot water
- 1/4 cup butter
- 1/8 teaspoon salt
- 1/8 teaspoon sugar
- 1/2 cup all-purpose flour
- 3/4 teaspoon dry mustard
- dash cayenne pepper
- 2 eggs
- 1/2 cup shredded natural Swiss cheese, 2 ounces
Instructions
- In a small saucepan, combine water, butter, salt, and sugar. Beat til butter melts and mixture boils.
- Vigorously stir in flour, dry mustard, and cayenne all at once.
- Stir over medium heat til mixture leaves sides of pan. Remove from heat.
- By hand, stir in eggs, one at a time til blended. Stir in cheese, drop from teaspoon onto greased baking sheet.
- Bake in 450 degree F. oven for 10 minutes, reduce heat to 375 degrees F. and bake 15 minutes. till puffed and golden.
- Turn off oven and let puffs remain inside 3 minutes more. Serve hot.

Makes 20 appetizers.
