    Recipe Introduction


    Jessica made this one Christmas for all of John's relatives.


    List of Ingredients


    • 2 cups all purpose flour
    • 2 cups white sugar
    • 2 - 3 ounce packages coconut flavored instant pudding mix
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 1/4 cup vegetable oil
    • 5 eggs
    • 2 cups canned pumpkin


    Instructions


    1. Preheat oven to 325 degrees F. Grease 2 9x5 inch loaf pans.
    2. In a large bowl, combine flour, sugar, pudding mix, baking soda, salt and cinnamon. Stir in the oil, eggs and pumpkin until just blended. Do not over beat. Pour batter into prepared pans.
    3. Bake in preheated oven for 1 hour or until toothpick inserted in center of loaf comes out clean. Remove from oven and let stand 15 minutes, then remove from pan and finish cooling on wire rack.


    Final Comments


    The baking time usually exceeds 1 hour. Try about 1 hour 15 minutes. Keep testing, it depends on your oven.
