Blintz Casserole
This is a brunch recipe. It comes from a cookbook called "The Three Pigs". A cookbook and Guide to Dining in New Bern, NC.
List of Ingredients
- Filling
- 2 lbs. ricotta cheese
- 2 eggs
- 1/4 cup sugar
- dash salt
- 1 lemon juiced or 1/4 cup lemon juice
- 8 oz. cream cheese softened
- Batter
- 1/2 lb. butter, melted
- 1/2 cup sugar
- 2 eggs
- 1 cup flour
- 3 tsp. baking powder
- 1/8 tsp salt
- 1/4 cup milk
- 1 tsp. vanilla
Instructions
- Place filling ingredients in mixer and blend. Set aside.
- Mix the batter ingredients by hand. Spoon 1/2 into greased 9x13x2" pan. Top with filling, spreading not mixing. Spread remaining batter over filling.
- Bake at 300 degrees F. for 1 1/2 hours.
