    Broccoli and Cheese Brunch Casserole

    List of Ingredients


    • 8 ounces ground breakfast sausage
    • 1-10 ounce package chopped frozen broccoli, thawed and drained
    • 1 1/2 cups shredded Cheddar cheese, divided
    • 8 eggs lightly beaten
    • 1 cup ricotta cheese
    • 1/4 cup milk
    • 1 teaspoon ground black pepper
    • 1/2 teaspoon salt
    • 1 plum tomato, thinly sliced


    Instructions


    1. Place sausage in a large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
    2. Preheat oven to 350 degrees F. Ligthtly grease a 7x11 inch casserole dish. Or a Quiche pan.
    3. In a bowl, combine sausage, broccoli and 1/2 cup cheddar cheese. Spoon into prepared baking dish.
    4. Stir together 1/2 cup cheddar cheese, eggs, ricotta cheese, milk, pepper and salt. Pour over broccoli mixture. Sprinkle with remaining 1/2 cup cheese. Arrange tomato slices on top.
    5. Cover with foil and bake in preheated oven for 30 minutes. Uncover and bake for an additional 15 minutes. Let stand for 10 minutes before serving.
