Broccoli and Cheese Brunch Casserole

- 8 ounces ground breakfast sausage
- 1-10 ounce package chopped frozen broccoli, thawed and drained
- 1 1/2 cups shredded Cheddar cheese, divided
- 8 eggs lightly beaten
- 1 cup ricotta cheese
- 1/4 cup milk
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 plum tomato, thinly sliced
Instructions
- Place sausage in a large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Preheat oven to 350 degrees F. Ligthtly grease a 7x11 inch casserole dish. Or a Quiche pan.
- In a bowl, combine sausage, broccoli and 1/2 cup cheddar cheese. Spoon into prepared baking dish.
- Stir together 1/2 cup cheddar cheese, eggs, ricotta cheese, milk, pepper and salt. Pour over broccoli mixture. Sprinkle with remaining 1/2 cup cheese. Arrange tomato slices on top.
- Cover with foil and bake in preheated oven for 30 minutes. Uncover and bake for an additional 15 minutes. Let stand for 10 minutes before serving.
