    Crustless Spinach Quiche

    List of Ingredients


    • 1 tablespoon veg oil
    • 1 onion, diced
    • 1 10 ounce pkg frozen spinach, thawed & squeezed dry
    • 5 eggs
    • 3/4 lb. muenster cheese, grated
    • salt and pepper to taste


    Instructions


    1. Preheat oven to 350 degrees.
    2. Butter 9 inch pie plate. Heat oil in skillet over med, high heat. Add onion and saute until wilted. Add spinach, cook until excess moisture is evaporated. Let cool.
    3. Beat eggs in bowl. Add cheese. Stir into onion-spinach mixture and season to taste. Turn into pie plate, spreading evenly. Bake until top is nicely browned and tester comes out clean. 40 - 45 minutes.
