Recipe Introduction
A high school classmate gave me this recipe when I taught in her daughter's school quite a few years after graduation.
List of Ingredients
- 3 pound container fresh ricotta cheese
- 1 teaspoon vanilla extract
- 3/4 cup very fine sugar
- 6 ounce bag mini chocolate chips
- 3 packages lady fingers
Instructions
- Mix with electric mixer for 10 - 20 minutes the ricotta, vanilla extract and sugar. Until very smooth and creamy.
- Then mix in with a spoon 6 ounces of mini chocolate chips.
- Line a spring form pan with lady fingers, flat side up and stand up around side of pan.
- Fill with 1/2 of mixture.
- Then put another layer of lady fingers.
- Pour remaining mixture on top of lady fingers.
- Decorate with leftover lady fingers and cherries.
- Refrigerate for the day or overnight.
