    List of Ingredients




    32 ounces cream cheese, room temp.
    6 eggs
    1 1/2 cups sugar
    1 teaspoon vanilla
    2 ounces butter, unsalted, melted
    1 teaspoon lemon juice
    2 cups sour cream
    2 tablespoons corn starch
    8 ounce can pineapple chunks, drained

    Preheat oven to 375 degrees F.
    In a bowl, with an electric mixer, combine vanilla, cream cheese, eggs, sugar, melted butter, lemon juice, sour cream, and corn starch. Blend until smooth.
    Pour mixture into greased 10 inch spring form pan. Arrange pineapple chunks on top of cheesecake batter.
    Put spring form pan in another pan filled with water. The water should be 1/2 way up the spring form pan. You might need to wrap the springform pan in foil, so it doesn't leak.
    Bake for 1 hour at 375 degrees F. then reduce oven temperature to 350 degrees F. and bake for another 1/2 hour.
    It should take about 1 1/2 hours to bake. Let cool and serve.
