Irish Raisin Cake

- 4 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 8 ounces butter or margarine
- 1 pound raisins
- 1 1/4 cup sugar
- 3/4 cups buttermilk
- 3 eggs
Instructions
- Combine flour, baking soda, and cream of tartar.
- Cut in butter until crumbly (use hands or 2 knives).
- Add in sugar and raisins.
- Beat eggs.
- Add buttermilk and eggs and mix well with dry ingredients, to form a stiff dough.
- Put into an 8" round greased pan.
- Bake at 425 degrees F. for 15 minutes.
- Reduce heat to 325 degrees F. and bake for 1 - 1 1/4 hours until knife inserted in middle of cake comes out clean.
