    Irish Raisin Cake

    List of Ingredients


    • 4 1/2 cups flour
    • 1 teaspoon baking soda
    • 1 teaspoon cream of tartar
    • 8 ounces butter or margarine
    • 1 pound raisins
    • 1 1/4 cup sugar
    • 3/4 cups buttermilk
    • 3 eggs


    Instructions


    1. Combine flour, baking soda, and cream of tartar.

    2. Cut in butter until crumbly (use hands or 2 knives).

    3. Add in sugar and raisins.

    4. Beat eggs.

    5. Add buttermilk and eggs and mix well with dry ingredients, to form a stiff dough.

    6. Put into an 8" round greased pan.

    7. Bake at 425 degrees F. for 15 minutes.

    8. Reduce heat to 325 degrees F. and bake for 1 - 1 1/4 hours until knife inserted in middle of cake comes out clean.
