Molasses Sweet Potato Pie

- 1 1/2 pounds sweet potatoes, or 2 cups cooked mashed or canned sweet potato
- 1 cup heavy cream
- 3 large eggs, lightly beaten
- 2 tablespoons molasses
- 1 cup sugar
- 1 tablespoon flour
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamon
- 1/4 teaspoon freshly grated or ground nutmeg
- 1/4 teaspoon finely ground black pepper
- 1/4 teaspoon salt
- 1 unbaked 9 inch pie shell
Instructions
- Preheat oven to 350 degrees F..
- Place mashed sweet potatoes in a large bowl. Add cream, eggs, and molasses to the potatoes and whisk until well blended.
- In a separate medium bowl, stir together sugar, flour, ginger, cardamon, cloves, nutmeg, pepper and salt together. Add to the sweet potato mixture and stir until all the sugar is incorporated and the mixture is smooth.
- Pour the filling into the unbaked pie crust and bake on a center rack for 45 - 50 minutes, or until the pie is firm around the edges and slightly jiggly in the center when you shake it. The pie will firm up completely as it cools.
- Let the pie cool on a baking rack for 30 minutes or more before slicing . Serve warm or chilled.
