Chinese Chicken Casserole

Recipe Introduction
Great make ahead casserole. Serve with a tossed salad and bread.
List of Ingredients
- 3 cups cubed cooked chicken. 4 breasts
- 3 cups cooked rice
- 1 1/2 cup diced celery
- 1 1/2 cup sliced mushrooms
- 1 1/2 cup diced onion
- 2 T lemon juice
- 2 large cans diced water chestnuts
- salt to taste
- 1 can cream of mushroom soup
- 1/2 cup water
- 1 1/4 cup mayonaise
- Topping
- 1/2 cup butter
- 1/4 cup slivered almonds
- 1 cup cornflakes
Instructions
- Mix together soup, water, mayo, and lemon juice.
- Preheat oven to 350 degrees.
- Mix all ingredients, except topping.
- Pour into a casserole.
- Topping prep.
- Saute almonds and cornflakes in butter. Sprinkle on top of casserole.
- Bake 350 for 40 minutes.
Final Comments
Serve with a salad and bread.
