    Chinese Chicken Casserole

    Recipe Introduction


    Great make ahead casserole. Serve with a tossed salad and bread.


    List of Ingredients


    • 3 cups cubed cooked chicken. 4 breasts
    • 3 cups cooked rice
    • 1 1/2 cup diced celery
    • 1 1/2 cup sliced mushrooms
    • 1 1/2 cup diced onion
    • 2 T lemon juice
    • 2 large cans diced water chestnuts
    • salt to taste
    • 1 can cream of mushroom soup
    • 1/2 cup water
    • 1 1/4 cup mayonaise
    • Topping
    • 1/2 cup butter
    • 1/4 cup slivered almonds
    • 1 cup cornflakes


    Instructions


    1. Mix together soup, water, mayo, and lemon juice.
    2. Preheat oven to 350 degrees.
    3. Mix all ingredients, except topping.
    4. Pour into a casserole.
    5. Topping prep.
    6. Saute almonds and cornflakes in butter. Sprinkle on top of casserole.
    7. Bake 350 for 40 minutes.


    Final Comments


    Serve with a salad and bread.
