Pan Poached Fish
List of Ingredients
- 1 tablespoon butter
- 1 pound fillet
- paprika
- chopped parsley
- juice of 1 lemon
Instructions
- Melt the butter in a heavy skillet, add fish and saute over medium heat without turning. Sprinkle with paprika and parsley. Cover and cook for several minutes. Add lemon juice just before serving.
- Scallops may also be added to fillets. Cook scallops first and proceed as above.
- Serve with rice and vegetables or salad.
