Shrimp Tortellini
This comes from the New Bern, North Carolina cookbook, called Savoring the Seasons Riverside.
List of Ingredients
- 1 (10 ounce) package fresh cheese tortellini
- 1/3 cup butter
- 1 lb. fresh deveined, peeled shrimp
- 1 shallot, minced
- 2 tablespoons chopped fresh basil or 2 teaspoons dried basil
- 1/2 cup grated Parmesan cheese
Instructions
- Cook the tortellini according to the package directions. Drain and set aside.
- Melt the butter in a large skillet over medium-high heat. Add the shrimp, shallot, and basil. Cook for 5 minutes or until the shrimp turn pink, stirring constantly. Add the tortellini and parmesan cheese. Toss gently. Garnish with additional fresh basil leaves.
