    Minted Melon and Pineapple salad

    List of Ingredients


    • 1 fresh pineapple (about 3 1/2 lbs)
    • 2 cups cantaloupe balls
    • 2 cups honeydue melon balls
    • 1/3 cup apple jelly
    • 1 tablesoppn fresh mint leaves


    Instructions


    1. cut pineapple into 1 inch cubes.
    2. Place cubed pineapple in medium mixing bowl.
    3. Add melon balls.
    4. Set aside
    5. In microwave safe dish, combine jelly and mint. Microwave on high for 1-2 minutes, or until jelly is melted, stir once.
    6. Add jelly mixture to fruit.
    7. Toss to coat.
    8. Cover with plasic wrap
    9. Chill at least 1 hour.
