Recipe Introduction
I liked this a lot. It was very tasty. Make sure you line the baking sheet with foil to aid in clean up.
List of Ingredients
- 4 boneless chicken breasts
- 8 pieces bacon, coarsely chopped
- 8 ounces fresh mushrooms, sliced
- butter
- 1 clove garlic, minced
- 4 ounces shredded cheddar cheese
Instructions
- Pound the chicken to about 1/4 inch thick.
- In a skillet, saute the mushrooms and garlic in butter. Cook until juices have evaporated.
- Fry the bacon in the same skillet until crisp, drain on paper towels, keeping the drippings in the pan.
- Saute the chicken in the bacon fat until juices run clear. Remove to a foil-lined baking sheet; season with salt and pepper. Top the chicken with the mushrooms and bacon, then with the shredded cheese. Broil until cheese is melted and bubbly.
Final Comments
Makes 4 servings. (2.5 carbs each)
If you use a cast iron skillet, you can put in under the broiler and then you won't need to use the baking pan.
