Recipe Introduction
This recipe is over 30 years old. I used to make it when we were newlyweds!
List of Ingredients
2 center cut ham steaks, 1-1 1/2 inches thick
6 pineapple slices
1/2 cup orange juice
1/3 cup dark corn syrup
1/2 teaspoon ground cloves
2 tablespoons sesame seeds
1/2 cup dark rumRecipe
AHEAD OF TIME:
Slash fat edges of steaks. Place 1 ham slice in shallow casserole. Place 3 pineapple slices on top.
In a bowl mix orange juice, corn syrup, and cloves. Spoon 1/2 of mixture over the 3 pineapple slices.
Put 2nd ham slice on top of that and put the rest of the pineapple slices and mixture on top of that.
Stir sesame seeds in saucepan over low heat, about 5 minutes or until golden. Sprinkle seeds on top of steaks.
Refrigerate.
SERVING DAY:
Place casserole in preheated 400 degree F. oven for 25-30 minutes. Heat rum in ladle until luke warm. Pour rum over ham steaks in casserole and set aflame. When flames subside, cut ham, garnish with lime, tomatoes, and parsley.
Serve with Curried Rice and a cucumber bean sprout salad.
Have Mai Tais and a rumaki appetizer.
Dessert would be peeled oranges sprinkled with coconut.
And a good Rose wine.
