    Lentils with Italian Sausage

    Serves 4

    List of Ingredients





    1 pound good quality Italian sausage

    1 medium onion, chopped

    2 cloves garlic, peeled and minced

    1 cup dried Italian Lentils

    4-5 cups chicken or vegetable stock

    Fresh chopped herbs such as basil or Italian parsley

    Cheese for grating

    Recipe



    Cut sausage into 1 inch pieces and sauté with onion and garlic until sausage is browned. Add lentils and toss well with sausage mixture. Add 2 cups chicken stock and cook until most of the stock is evaporated. Add more stock, 1 cup at a time until lentils are tender. This will take about 4-5 cups of stock and approximately 30 minutes of cooking time.



    Garnish with chopped herbs and a sprinkling of grated cheese.
