Chicken Breasts with Accidental Sauce - part 2

Recipe Introduction
This sauce can be served over chicken or pasta.
List of Ingredients
- 2 cans (12 ounces each) artichoke hearts, drained and quartered
- 2 minced garlic cloves
- chopped parsley
- 1 Tablespoon olive oil
- 3/4 cup heavy cream
- 1/2 cup chicken stock or broth
- 2 tablespoons grated parmesan cheese
Instructions
- Put all the ingredients except the grated cheese in a saucepan. Simmer, covered for 30 minutes, then process in a food processor or blender until smooth. Then put back into saucepan, add the cheese and heat. Add more chicken broth or stock if necessary to thin sauce.
