Chicken and White Bean Chili

List of Ingredients
- 1/3 cup olive oil
- 1 1/3 cup chopped onions
- 2 cloves garlic minced
- 1 red pepper chopped
- 2 1/4 lbs. chicken cubed (or use 1 rottisserie chicken, shredded)
- 3 1/2 tablespoons Chili powder
- 2 Tablespoons Tomato paste
- 1 tablespoon ground cumin
- 1 tablespoon oregano
- 2 - 16 ounce cans cannelini beans. Drain but reserve liquid
- 2 15 ounce cans diced tomatoes
Instructions
- Heat oil in large pot.
- Add onion, pepper and garlic. Saute 5 minutes.
- Add chicken, sprinkle with salt and pepper and saute 5 minutes more.
- Mix in next 6 ingredients, including 1 cup reserved liquid from beans.
- Simmer 20 minutes more.
- Season to taste with salt and pepper.
Final Comments
Serves 6.
Serve with cornbread.
