    Chicken and White Bean Chili

    List of Ingredients


    • 1/3 cup olive oil
    • 1 1/3 cup chopped onions
    • 2 cloves garlic minced
    • 1 red pepper chopped
    • 2 1/4 lbs. chicken cubed (or use 1 rottisserie chicken, shredded)
    • 3 1/2 tablespoons Chili powder
    • 2 Tablespoons Tomato paste
    • 1 tablespoon ground cumin
    • 1 tablespoon oregano
    • 2 - 16 ounce cans cannelini beans. Drain but reserve liquid
    • 2 15 ounce cans diced tomatoes


    Instructions


    1. Heat oil in large pot.
    2. Add onion, pepper and garlic. Saute 5 minutes.
    3. Add chicken, sprinkle with salt and pepper and saute 5 minutes more.
    4. Mix in next 6 ingredients, including 1 cup reserved liquid from beans.
    5. Simmer 20 minutes more.
    6. Season to taste with salt and pepper.


    Final Comments


    Serves 6.
    Serve with cornbread.
