    More Than Peachy Chicken

    List of Ingredients

    4 medium chicken breast halves, skinned
    1 (14 oz.) can sliced peaches (juice pack), drained
    1/4 teaspn grnd cinnamon
    1/4 teaspn grnd allspice
    dash pepper
    1 tablespn balsamic vinegar
    1/4 teaspn crushed rosemary

    Recipe

    Preheat oven to 375° F.

    Rinse chicken, pat dry.

    Arrange chicken, bone side down, in a baking dish.

    Place drained peaches in a blender. Cover and blend til smooth.

    In a small bowl stir togerher 1/2 cup of the blended peaches, cinnamon, allspice and pepper. Spoon over the chicken.

    Bake the chicken, uncovered, in a 375 degree oven for 45 min. or until the chicken is tender and not pink.

    Meanwhile, in a small saucepan combine remaining peaches, vinegar and rosemary; heat through.

    Spoon onto individual plates; top with a chicken breast half.

    Makes 4 servings.
