Roasted Greek Style Chicken and Vegetabl

List of Ingredients
- olive oil
- 3 cloves garlic, chopped
- dried oregano
- 1 T fresh lemon juice
- salt and pepper to taste
- 2 zucchini, sliced
- 2 cups grape tomatoes, halved
- 1 14 oz. can artichoke hearts, halved and drained
- 4 boneless, skinless chicken breasts
Instructions
- Preheat oven to 450 degrees F.
- In a large bowl, combine 4 teasspns oil, garlic, oregano, lemon juice, salt, pepper and vegetables. Toss to coat.
- With a slotted spoon, scoop out vegetables and place on one side of a baking pan, leaving room for chicken.
- Add chicken to mixing bowl, coat with remaining oil,lemon juice mixture. Place chicken on empty side of baking pan.
- Roast in 450 degree oven for about 20 minutes.
Final Comments
Enjoy. I use the premixed Spice Bouquet greek seasoning. And I add more lemon juice.
