    Recipe Introduction


    Bought this little cookbook in Puerto Rico. It has some nice recipes in it. This one was very tasty.


    List of Ingredients


    • 6-8 boneless chicken breasts
    • 1/2 teaspoon salt
    • 2 twists freshly ground black pepper
    • 2 shallots or an onion, finely chopped
    • 1 cup vegetable oil
    • 1 cup freshly squeezed lime juice
    • 4 tablespoons fresh tarragon or 4 teaspoons dried


    Instructions


    1. Sprinkle each piece of chicken with salt and pepper. In a bowl stir together shallots, oil, juice and tarrogon.
    2. Immerse chicken breasts in marinade, reserving 1/2 cup, cover bowl and refrigerate 4-6 hours.
    3. Remove bowl from refrigerator an hour before cooking chicken.
    4. Arrange chicken pieces in shallow baking dish and baste with reserved marinade. Place under broiler approximately 5 minutes. Then turn chicken pieces. Baste again with reserved marinade and broil 5 more minutes. Serve immediately.


    Final Comments


    Instead of broiling I cooked this on the barbeque.
