    List of Ingredients


    • 3 onions, quartered
    • 2 celery ribs, chopped
    • 1 tomato, chopped
    • 1 green pepper, chopped
    • 8 carrots, chopped
    • 4 potatoes, sliced thin
    • 1 whole chicken cut up
    • Oil
    • 2 garlic cloves, minced
    • paprika
    • pepper
    • 1/4 teaspoon basil
    • 1/4 teaspoon thyme
    • 1 bay leaf


    Instructions


    1. Bring 2 quarts of water to boil in a large kettle
    2. Clean and chop vegetables. Saute Chicken in oil and garlic. Sprinkle with paprika and pepper while cooking.
    3. Add chicken to kettle and cook for 1/2 hour. Add onions, celery, potatoes, basil, thyme and bay leaf. Cook for 3 minutes.
    4. Serve in soup bowls with crusty bread.
