Creamy Carrot Soup

List of Ingredients
- 1/3 cup olive oil
- 2 onions, diced
- 2 lbs carrots, sliced into rounds, use good carrots with greens attached
- 5-6 cups chicken broth
- 1 cup whole milk
- 1/2 teaspoon fresh ginger, grated
Instructions
- Heat oil in stockpot. Add onions, saute til translucent and just beginnng to carmelize. 10 minutes
- Add carrots and stir. Cook 30 minutes, covered. Stir occasionally.
- Add chicken broth, puree till chunky. Add milk and ginger. Puree till smooth.
Final Comments
Serve with baked camenbert cheese, baked in box for 20 minutes and good french bread.
