    Creamy Carrot Soup

    List of Ingredients


    • 1/3 cup olive oil
    • 2 onions, diced
    • 2 lbs carrots, sliced into rounds, use good carrots with greens attached
    • 5-6 cups chicken broth
    • 1 cup whole milk
    • 1/2 teaspoon fresh ginger, grated


    Instructions


    1. Heat oil in stockpot. Add onions, saute til translucent and just beginnng to carmelize. 10 minutes
    2. Add carrots and stir. Cook 30 minutes, covered. Stir occasionally.
    3. Add chicken broth, puree till chunky. Add milk and ginger. Puree till smooth.


    Final Comments


    Serve with baked camenbert cheese, baked in box for 20 minutes and good french bread.
