Recipe Introduction
I made this to bring to the homeless shelter. It makes enough for an army.
List of Ingredients
- 3 1/2 - 4 pounds lean ground beef
- 2 1/2 - 3 cups water
- 3 cans (16 ounces each) tomato sauce
- 2 cans (6 ounces) tomato paste
- 5 large potatoes, peeled and chopped into 1/4 inch pieces
- 3 cans corn niblets, drained
- 2 large stalks of celery, roughly chopped
- 1 large onion, roughly chopped
- 4 large carrots, sliced int 1/4 inch circles`
- salt and pepper to taste
Instructions
- Cook the beef until browned. Drain off the fat.
- Place the meat in the stew pot (large with a lid) along with the water, tomato sauce, tomato paste, potatoes, corn, celery, onion, and carrots. Season with salt and pepper.
- Mix well. Cover with the lid and simmer on medium-low heat until the potatoes are cooked all the way through. About 2 hours.
- Serve nice and hot.
Final Comments
When I make it for the family, I add some red wine to it and a bay leaf.
