Aunt Etta's Zucchini Soup/ The Record

List of Ingredients
- 1 large onion, chopped
- 2 teaspoons olive oil
- 4 zucchini
- 1/2 cup water
- 10 cups beef broth
- 3/4 cup Aborio rice
Instructions
- Saute chopped onion in olive oil until golden.
- Slice zucchini; add to pot. Lower heat, cover pot, and steam until tender.
- In another large pot or 5 quart Dutch oven, heat broth. Add zucchini, onion, and rice. Simmer 15-20 minutes or until rice is cooked.
