POTATO SOUP

List of Ingredients
4 cups diced potatoes
1 cup diced celery
1 cup diced onion
2 to 3 cups water
2 to 3 teaspoons salt
4 tablespoons butter
1 cup milk
1 cup cream
1 tbsp parsely
1/2 to 1 teaspoon caraway seeds
pepper to taste
Recipe
Peel and dice potatoes. Add to a large pot. Add onion and celery. Cook until tender, about 20 minutes. When done, mash vegetables with a masher, leaving small chunks. Stir in the milk, cream, parsley, caraway seeds and pepper to taste.
Add the butter and continue to heat on medium flame until melted.
*Optional. . . dice and fry bacon until crispy. Garnish soup with bacon bits.
