    • 4 cups chicken broth, plus extra
    • 1 8 ounce pkg mini cheese ravioli
    • 2 cups shredded cooked chicken
    • 4 cups baby spinach
    • salt and pepper to taste


    Instructions


    1. Bring broth to a simmer in a large pot.
    2. Cook ravioli in simmering broth for the time noted on the package.
    3. Stir in chicken and spinach until spinach wilts.
    4. Season to taste.
    5. Serves 4

    I also sprinkle with parmesan cheese before serving.
