Spicy Sausage and Chicken Soup

List of Ingredients
- Olive oil
- 6 garlic cloves
- 1 chopped yellow onion
- 3 stalks celery, chopped
- 2 large carrots, chopped
- 4 or more cups low sodium chicken broth
- 1 15oz can crushed tomatoes
- 1 can chick peas
- 1 lb. italian sausage casings removed
- 4 cups chopped baby kale
- black pepper to taste
Instructions
- Heat oil, garlic. Add sausage. Cook stirring often, til browned and crumbled. About 5 minutes.
- Add onion, celery, and carrots to pan. Cook till slightly tender, about 4 minutes.
- Stir in broth, tomatoes, chickpeas and pepper. Bring to a simmer.
- Reduce heat and cook about 30 minutes. Stir in kale.
Final Comments
Serve with crusty bread.
Serves 6 or more.
