    Spicy Sausage and Chicken Soup

    List of Ingredients


    • Olive oil
    • 6 garlic cloves
    • 1 chopped yellow onion
    • 3 stalks celery, chopped
    • 2 large carrots, chopped
    • 4 or more cups low sodium chicken broth
    • 1 15oz can crushed tomatoes
    • 1 can chick peas
    • 1 lb. italian sausage casings removed
    • 4 cups chopped baby kale
    • black pepper to taste


    Instructions


    1. Heat oil, garlic. Add sausage. Cook stirring often, til browned and crumbled. About 5 minutes.
    2. Add onion, celery, and carrots to pan. Cook till slightly tender, about 4 minutes.
    3. Stir in broth, tomatoes, chickpeas and pepper. Bring to a simmer.
    4. Reduce heat and cook about 30 minutes. Stir in kale.


    Final Comments


    Serve with crusty bread.
    Serves 6 or more.
