Tuscan White Bean Soup

List of Ingredients
- 1 teaspoon olive oil
- 1 small onion chopped
- 1 T minced garlic
- 1 15 oz can cannellini beans, rinsed and drained
- 1 14 ounce can diced tomatoes, undrained
- 1 cup reduced fat chicken broth
- 1 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 2 cups baby spinach leaves
Instructions
- In a large saucepan, heat oil, add onions and garlic, cook about 5 minutes.
- Stir in beans, cook 1 more minute.
- Stir in tomatoes, chicken broth, thyme and pepper. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
- Remove soup from heat and stir in spinach leaves. Let stand covered, for 1 minute to wilt spinach. Serve with grated parmesan cheese.
