List of Ingredients
- 1/4 cup vinegar
- 3 Tablespoons lemon juice
- 1 envelope dry Italian dressing mix (Good Seasons)
- 1/2 cup oil
- 2 lbs. cut up vegetables (zucchini, peppers, potatoes, onions, mushrooms, eggplant)
Instructions
- Pour vinegar and oil into shaker container. Add dressing mix. Mix well. Reserve 1/4 cup dressing and refrigerate.
- Pour remaining dressing on vegetables: cover. Marinate in refrigerator 30 minutes to 1 hour.
- Grill vegetables over medium-hot coals for 10 minutes or until tender, basting with reserved 1/4 cup dressing.
