    Mashed Yams with Bourbon

    Recipe Introduction


    This is a very old recipe from one of the newspapers.


    List of Ingredients


    • 5 lbs. yams
    • 1 1/2 teaspoon salt
    • 1/2 heaping teaspoon nutmeg
    • 1 cup softened sweet butter
    • 1/3 cup bourbon
    • freshly ground pepper


    Instructions


    1. Scrub yams, cut each one in half crosswise. Put in a large deep pot, cover with water, bring to a boil, cover and boil gently for 20 - 30 minutes, until fork tender. Drain and peel them as soon as they are cool enough to handle.

    2. Mash them by hand or with an electric mixer with salt and nutmeg, then gradually beat in butter. Add bourbon in a stream, along with pepper to taste.

    3. Transfer to a greased 2 quart casserole dish, cover lightly with foil and heat in a 350 degree F. oven for 25 minutes.

    4. Stir them up well with a spoon and serve piping hot.


    Final Comments


    These can be make in advance. Up to a day in advance, cover the casserole with plastic and refrigerate, bringing back to room temperature before baking. They freeze well also. Wrap them in heavy foil, seal and freeze.
    Let defrost, still wrapped, in the refrigerator or 2 hours at room temperature, then transfer to casserole and bake as above.
