Mom's Stuffed Artichokes

List of Ingredients
- 4 artichokes
- 1 cup bread crumbs
- 1/2 cup grated parmesan cheese
- 1 large clove garlic, minced
- 2 tablespoons parsley
- Olive oil so mixture is damp, 2-3 tablespoons
Instructions
- Soak artichokes in cold water. Drain. With sharp sissors cut off all points. Turn the chokes upsidedown, hit gently to spread leaves. Cut out inside part, choke.
- Stuff leaves from outside to inside.
- Place in deep saucepan.
- Put water to cover 1/2 of the artichoke.
- Sprinkle 2 tablespoons of olive oit on top.
- Cover, over low heat, simmer for 1/2 hour.
- Test to see if they are done by pulling an outside leaf. It will come out easily when done. Add more water if necessary.
