    Mom's Stuffed Artichokes

    List of Ingredients


    • 4 artichokes
    • 1 cup bread crumbs
    • 1/2 cup grated parmesan cheese
    • 1 large clove garlic, minced
    • 2 tablespoons parsley
    • Olive oil so mixture is damp, 2-3 tablespoons


    Instructions


    1. Soak artichokes in cold water. Drain. With sharp sissors cut off all points. Turn the chokes upsidedown, hit gently to spread leaves. Cut out inside part, choke.
    2. Stuff leaves from outside to inside.
    3. Place in deep saucepan.

    4. Put water to cover 1/2 of the artichoke.
    5. Sprinkle 2 tablespoons of olive oit on top.
    6. Cover, over low heat, simmer for 1/2 hour.
    7. Test to see if they are done by pulling an outside leaf. It will come out easily when done. Add more water if necessary.
