List of Ingredients
- 2 lb. peeled potatoes4 T. olive oil
- 1/2C canned chick peas
- 2 cloves garlic, chopped
- 1 can stewed tomatoes
- 2 T. tomato paste
- salt and peo\pper
- Chopped fresh parsley
Instructions
- Slice potatoes thick.
- Saute onions until transparent in oil in large skillet.
- Add chick peas and chopped garlic.
- Add potoes, turning until golden brown.
- Add tomatoes and tomato paste, diluted with 1/2 cup water.
- Season with salt and pepper.
- Simmer until potatoes and chick peas are fork tender.
- Sprinkle with parsley.
Final Comments
Serve warm or cold.
Serves 6.
