Spinach and Garlic

List of Ingredients
- 1 lb. fresh spinach (I use 2 bags of baby spinach)
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- red pepper flakes
Instructions
- Wash or rinse spinach well, shake off excess water but do not dry.
- Heat olive oil in a heavy saucepan and add the minced garlic and a pinch of red pepper flakes. Stir over medium high heat for 1 minute, then add the spinach.
- Stir well to coat spinach with oil and garlic, then cover and steam just until spinach is completely wilted and bright green. Do not overcook. Stir well and serve immediately.
