    List of Ingredients




    2 tablespoons olive oil
    16 ounces baby shrimp, rinsed with cold water and dried on paper towels
    or a clean dish towel
    1 packed cup torn fresh spinach
    1 cup yellow cherry tomato halves
    2 cloves garlic, minced
    1 teaspoon red-pepper flakes
    Dash of salt
    8 ounces whole-wheat angel hair pasta or capellini
    4 teaspoons Parmesan

    Recipe



    1. Heat the oil in a large skillet. Add the shrimp and sauté 2 to 3 minutes.
    Add the spinach, tomatoes, garlic, pepper, and salt and sauté 4 to 5 minutes, stirring occasionally.
    2. Meanwhile, cook the pasta according to the package directions. Drain.
    3. Toss the pasta with the shrimp. Sprinkle with the Parmesan and serve immediately.

    Serves 4. Per serving: 454 calories, 12 g fat, 2.5 g saturated fat, 242 mg cholesterol, 431 mg sodium, 50 g carbohydrates, 8 g fiber, 4.5 g sugars, 37 g protein
