    List of Ingredients


    • 1 lb lean trimmed beef round, cut into 1 inch cubes
    • 1 spray cooking spray
    • 1 sm. onion chopped
    • 2 cups, sliced mushrooms
    • 2 cloves garlic, minced
    • 2 large carrots, sliced
    • 1 15 oz can pinto beans, drained, rinsed and divided in half.
    • 14 ounce can crushed tomatoes
    • 1/2 teaspn. dried oregano
    • 1/4 teaspn. dried thyme
    • salt and pepper


    Instructions


    1. Place beef in slow cooker.
    2. Coat a skillet with cooking spray and sauté onion, mushrooms, and garlic, add onion mixture and carrots to slow cooker.
    3. Place 1/2 of beans in slow cooker. Puree remaining beans. Spoon blended beans into cooker. Add broth, tomatoes, oregano, thyme salt and pepper.
    4. Cover and cook on high for 6 hours.


    Final Comments


    1 serving is 1 1/4 cup. Serve over noodles or brown rice. Add the pts for the rice or noodles.
