Provencal Beef Stew

List of Ingredients
- 1 lb lean trimmed beef round, cut into 1 inch cubes
- 1 spray cooking spray
- 1 sm. onion chopped
- 2 cups, sliced mushrooms
- 2 cloves garlic, minced
- 2 large carrots, sliced
- 1 15 oz can pinto beans, drained, rinsed and divided in half.
- 14 ounce can crushed tomatoes
- 1/2 teaspn. dried oregano
- 1/4 teaspn. dried thyme
- salt and pepper
Instructions
- Place beef in slow cooker.
- Coat a skillet with cooking spray and sauté onion, mushrooms, and garlic, add onion mixture and carrots to slow cooker.
- Place 1/2 of beans in slow cooker. Puree remaining beans. Spoon blended beans into cooker. Add broth, tomatoes, oregano, thyme salt and pepper.
- Cover and cook on high for 6 hours.
Final Comments
1 serving is 1 1/4 cup. Serve over noodles or brown rice. Add the pts for the rice or noodles.
