    Honey Fruit Cake

    My mother's recipe


    List of Ingredients


    • 2 cups Raisins
    • 2 cups Golden Raisins
    • 1 cup dried Apricots
    • 1 cup Almonds
    • 1 cup chopped walnuts
    • 1 cup candied Cherries
    • 2 cups candied Pineapple
    • 2-1/2 cups mixed candied Fruit
    • 1-1/4 cup Shortening
    • 1-1/4 cup Honey
    • 6 Eggs
    • 2-1/2 cups Flour
    • 1 tsp Baking Powder
    • 1-1/2 tsp Salt
    • 1 tsp Cinnamon
    • 1/2 tsp Cloves


    Instructions


    1. Combine Raisins, Apricots, Nuts and Fruit.
    2. Cream Shortening and Honey; beat in eggs.
    3. Sift Flour, Baking Powder, Salt and Spices; blend into batter.
    4. Stir in Nuts and Fruits. Mix well.
    5. Pour into 10" tube pan lined with 2 thicknesses of greased brown paper and 1 of waxed paper.
    6. Bake at 250°with shallow pan of hot water on floor of oven for 5 hours.


    Final Comments


    I haven't tried this recipe but Mother made the best Fruit Cake I have ever eaten. Makes a large cake.
